The saying goes “You can never go home again.” I guess that is never more true after the loss of a parent. When my mother passed away, she did not want a funeral so I had to create my own way to mark the occasion. My mom wasn’t a huge cook but she did enjoy it and made her specialties very well. To this day, I have never had lasagna quite like my mother’s. My most favorite thing she made was pineapple bread pudding. It was one of those things I would request when home from college on break. She made it willingly and with love any and every time. I ate it for breakfast and dessert. So in marking her passing the only way I know how, I got in the kitchen. I hope my children love it as much as I do. It is something small but every time I make it I will be overwhelmed with the love I have- and will always have for my mom.

Joanie’s Pineapple Bread Pudding

pineapple bread pudding

1 20 oz can crushed pineapple, drained
1 cup sugar
1/2 cup butter, softened
2 eggs
7 slices white sandwich bread
2 Qt baking dish, greased

1) Preheat over to 350
2) Cream butter and sugar
3) Add eggs one at a time
4) Fold in pineapple and then bread
5) Pour into baking dish and bake for 30 minutes

Sometimes simple things are best!

    Since we look to our mothers to nurture and feed us throughout our lives, this seems like a fitting memorial. Plus canned pineapple–it’s so good!
